Sunday Bakes // Nutella Banana Loaf

A classic banana loaf was one of the first bakes I ever attempted which turned out well. My Mum has an old school recipe which works a dream every single time.

After a night out in London with my school friends, I was feeling ready to indulge in my favourite Sunday past time. I decided a banana loaf was the perfect recipe for such a day, it fills the house with the most amazing smell and is basically a pretty easy recipe to knock up when you are feeling a little worse for wear after one too many G&Ts (and copious amounts of dancing). 

This recipe has a slight twist, with the addition of Nutella. 

Nutella Banana Bread Loaf
Makes 1 loaf


2 large bananas
1/2 cup butter
1 egg
1 cup caster sugar
2 self raising flour
1 TSP bicarbonate of soda
1/4 cup warm water
1/2 cup Nutella
1/2 cup chocolate chips
1/4 TSP salt


Preheat the oven to 180C. 
Peel and mash the bananas with a fork.
In a large bowl cream the butter, sugar and eggs.
Add the flour and salt to the mixture and mix well to form a soft crumb texture. 
Dissolve the bicarbonate of soda in the warm water and add to the mixture. 
Add the mashed banana and chocolate chips to the mixture and combine. 
Pour half of the mixture into a lined loaf tin.
Melt the nutella until it is thick but pourable (either use a microwave or stick it into the oven for a few seconds) 
Pour 1/4 cup of melted nutella down the middle of the mixture and use a knife to form a swirly pattern.
Pour over the remaining half of the dough and top with the remaining nutella in the same way.
Bake for 50 minutes.
Remove from the oven and allow to cool.

Enjoy it by itself or spread with extra Nutella for the ultimate tasty treat.
