Sunday Bakes // Dark Chocolate HobNobs

I have a theory about why HobNobs are such a popular biscuit in the UK. I think it all boils down to the fact that they are super sturdy and dunkable. They can withstand a lot of tea dunking, which is something us brits are known for!

Coupled with a thick layer of dark chocolate, these make for the perfect afternoon pick me up. 

I have made this recipe before with my auntie and it was super simple, so I thought what better recipe for a super cold (and slightly hungover) Sunday. The original recipe is taken from here. I made the biscuits slightly smaller, hence making 28 instead of the original number of 20. You can make up your mind about what size you want!

Dark Chocolate HobNobs
Makes 20-28 cookies


125g unsalted butter
80g light brown sugar
2 TBSP golden syrup
140g oats
100g wholemeal flour
1/2 TSP bicarbonate of soda
1/2 TSP baking powder
1/2 TSP salt

100g dark chocolate
1 TSP coconut oil


Pre heat the oven to 180C.
Line two baking trays.
In a large bowl (or a stand mixer) cream together the butter & sugar to form a pale and smooth texture.
Add the golden syrup and mix till combined.
Next, add in the oats, flour, baking powder, bicarbonate of soda & salt and stir it all together. 
Depending on what size biscuit you want, take a tsp of dough (or more) and roll in your hands to form a ball, and place on the baking tray. 
Press down on the dough to allow it to spread out. 
Bake for 10-12 minutes until lightly browned. 
Remove from the oven and allow to cool.
For the chocolate coating, melt the chocolate and coconut oil over a pan of boiling water. 
Spoon a little of the mixture on to each biscuit and spread to cover. 
Allow to set and enjoy!
