Vegetarian Carb Free Spag Bol

Meat Free Mondays have transformed my Monday diet, making me appreciate the taste of veggie food, and I'm becoming an avid supporter of the cause!

This week I decided to try a veggie spin on one of my, and the majority of students so it seems, favourite meals, spaghetti bolognese! 




Taking the traditional recipe, I changed a few vital ingredients to make a carb free, low fat and vegetarian dish packed with flavour and perfect for my second MFM. 

The following ingredients are for one person, so double, triple or quadruple if you are making for more!

To make this delicious veggie dish you will need:
1 medium courgette
1 stick of celery
1/4 carrot
1/4 medium onion
1 garlic clove
low cal olive oil spray
1&1/2 tsp tomato puree
1/4 tsp mixed herbs
100g chopped tomatoes (canned)
75g quorn mince 

Lets start with the most exciting bit, courgette or zucchini spaghetti. The easiest way to do it is simply using a grater. 
Place your grater flat on the side, with the side you wish to use to make the spaghetti, I advice the thickest one. Chop the ends off the courgette & simply move the courgette along the grater in long strokes to make the spaghetti. Put the courgette ribbons in to a colander and add a few pinches of salt, set a side for later on. 



Next the bolognese. 
Begin by dicing the carrot, onion, celery and crushing the garlic. Heat a frying pan with a few sprays of low cal olive oil spray, add the carrot, onion and garlic and fry for 10 minutes. 


Add the tinned tomatoes, mixed herbs, tomato puree, celery and a cup of water. Stir well to make the sauce. 


Add in the quorn mince, and a little more water if needed, cover and simmer for 10 minutes.


Now back to the courgette spaghetti.

Boil a small pan of water, add a pinch of salt, then tip the courgette into the pan, allowing it to boil for 2 minutes.


Once this is done, drain the 'spaghetti' and place in your bowl.


Spoon the bolognese on top, and serve it away!
